Crackers: Cheddar and Parmesan, Chilli and Cheddar, Olive and Rosemary

In contrast to previous months we were given free rein to make a recipe of our choosing. The only proviso? It had to be crispy. As hostess Sarah from All Our Fingers in the Pie told us, “Soft is not part of this challenge.

I decided to go with crackers as they’re not something I’ve made before and I already had a couple of suitable recipes bookmarked to try. The three varieties I attempted were:

Cheddar Parmesan Crackers – from Leite’s Culinaria

Red Chilli and Cheddar Crackers – also from Leite’s Culinaria

Olive and Rosemary Crackers – from The Purple Foodie

Well, let me tell you all three crackers were easy-peasy to make and yielded great results. They certainly fulfilled Sarah’s crispy criteria. The only slight hiccup I experienced was that the dough for my olive and rosemary crackers turned a little grey in contrast to the beautiful golden crackers pictured on The Purple Foodie. I think this was probably my fault for not drying the brine from the olives sufficiently before adding to the mix.

My favourite? The little chilli and cheddar crackers. These were probably the simplest to make and packed a real punch. Fabulous as a scooby snack with a glass of red wine. And because of the chilli heat, you can only eat so many. So that makes them a healthy option. Almost ;-)

  1. This was my first month as a Daring Baker and I loved this challenge – purely because I would never have made my own crackers and as you say they are so easy and tasty. Lovely pics – again!!
